Calzone With Zucchini Filling

Ingredients
  Active dry yeast 1 1⁄2 Teaspoon
  Warm water 1 Cup (16 tbs)
  Sugar 1 Teaspoon
  Salt 1 1⁄2 Teaspoon
  Whole wheat flour 1 1⁄2 Cup (24 tbs)
  Whole wheat pastry flour 1 1⁄2 Cup (24 tbs)
  Zucchini filling 1 Cup (16 tbs) (As Needed)
  Minced onion 1⁄2 Cup (8 tbs)
  Garlic 2 Small, crushed
  Tomato 1 Large, chopped
  Egg 1
  Crumbled feta cheese 1⁄2 Cup (8 tbs)
  Grated swiss cheese 1⁄2 Cup (8 tbs)
  Dill weed 3⁄4 Teaspoon
  Salt 3⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
Directions

GETTING READY
1) Onto a non stick cookie sheet, spay with vegetable oil and keep aside

MAKING
2) Into a large bowl, sprinkle the yeast over warm water and allow to rest for 5 minutes
3) Tip in the sugar and salt
4) Into a separate bowl mix the two flours
5) Add 2 1/2 cups of the flour to the yeast mixture and knead
6) Knead in the remaining flour as required
7) Place the dough into a bowl and cover with a tea towel
8) Allow the dough to rise in a warm place till it doubles in size
9) While the dough is resting, make the filing
10) Into a skillet, pour some oil and saute the garlic and onion till soft
11) Add in the zucchini and tomato
12) Cover and cook for about 5 minutes till the zucchini are just crisp
13) Into a bowl , tip in the zucchini, egg, cheeses, dill weed, salt, pepper and mix well
14) Once the dough is risen punch down and divide into 6 pieces
15) Roll them out into 6 rounds of 1/4 inch thickness
16) Spoon the zucchini mixture onto each half
17) Fold the circle in half and seal the edges with little water
18) Using a fork, lightly prick the dough all over
19) Place onto a cookie sheet and then bake for 15 minutes at 450 F
till browned evenly

SERVING
20) Serve the calzone with oregano and chili flakes
