Traditional pizza dough/1 pound frozen bread dough, defrosted
Sweet italian sausages/Hot italian sausages
1 Pound (About 4 Links)
1 Cup (16 tbs), homemade or jarred (Plus More, If Desired)
Hot pepper flakes
Crushed fennel seed
6 Ounce, grated (1 1/2 Cups)
Grated parmesan cheese
1⁄4 Cup (4 tbs)
1. Preheat oven to 425°. Divide pizza dough in half and roll into two 8-inch circles. Sprinkle cornmeal over large baking sheet.
2. Remove sausages from casings. Crumble uncooked sausage meat into a medium saucepan and cook, stirring, over medium heat until no longer pink, about 10 minutes. Stir in 1 cup sauce, hot pepper flakes, and fennel seeds. Cook 5 minutes more. Cool and skim fat from top.
3. Cover half of each dough circle with mozzarella cheese, leaving a 1/2-inch border around edge. Top with sausage filling. Sprinkle with Parmesan cheese. Fold dough over filling to form a turnover. Press edges with tines of a fork to seal.
4. Bake 18 to 20 minutes, or until calzone are puffed and deep golden brown.
