Sugar Cake

Sugar cake is a kind of Chinese pastry that is made from rice flour, yeast, white sugar and baking powder. Though it is known as a cake it is definitely not round or circular in shape as most cakes are. Spongy and soft, this cake is usually steamed thereby lending a moist and a fluffy texture in contrasts to a dry and a firm one. The sugar cake recipes are quite a common feature especially in Hong Kong. Ideally sugar cake is meant to be devoured when hot because it can lose its moisture and softness if it gets cold. Quite a few variations of sugar cake recipes exist. For instance, the Vietnamese sugar cake recipe uses coconut milk as an ingredient and usually doesn’t contain the sourness that is typical of its Chinese counterpart. Sugar cake can also be made from brown sugar and brown rice flour and choosing either brown or white sugar completely depends on personal tastes and preferences.
