Queen Elizabeth Cake

Queen Elizabeth cake is a rich white cake made with with generous amounts of nuts and dates. It is usually frosted with sugar, cocount, butter and cream.

History of Queen Elizabeth Cake Recipe
It is unclear as to how the name came about. Legend has it that the queen mother was popular in Canada during the world war 2 and it may have been named in her honor. The recipe was also sold as a fund raiser after the war. Others say it was the queen’s own recipe use in fund raising efforts for the second world war. In the 1950s and 1960s it gained popularity as a wedding cake. It is closely related to Lazy Daisy cake which is similar but doesn’t have dates in it.

A conventional Queen Elizabeth cake requires chopped dates, butter, white sugar, vanilla, flour, baking soda, walnuts and brown sugar for preparation.

Flour, baking powder, soda and nuts are mixed along with chopped dates and stirred adequately. White sugar or margarine is added. Finally egg and vanilla are added and the entire mixture is thoroughly stirred to form a nice homogenous batter which is then baked in an oven to form the cake. A topping is prepared by mixing and heating coconut grating, butter and brown sugar in a heat pan. Chopped walnuts in the batter can give the cake an entirely different texture.

The Queen Elizabeth cake can be served warm or cold although it is rarely served cold. Its ideal to add a brush of raspberry jelly and a sprinkling of powdered sugar and whipped cream just before before serving.
