Fudge cake is basically a moist chocolate cake which includes fudge, an extremely rich and creamy candy like confection. This easy-to-make cake which is similar to the red velvet cake and often also resembles a pastry or a brownie, can be made in several variations. A Fudge cake has many other names like hot fudge sundae cake, chocolate fudge upside-down cake, chocolate cobbler, baked fudge pudding, brownie pudding cake, hot fudge pudding and chocolate pudding cake.

 

History of Fudge Cake

The first ever fudge cake was made in the early 1920s by Emelyn Battersby Hartridge in New York. She got to know through an acquaintance that fudge, a latest confection then, was becoming extremely popular in Baltimore, Maryland. She started making a cake that was blended with fudge. She finally sold her preparation for 40 pounds.

Preparing the basic fudge cake requires white sugar, unsweetened cocoa powder, milk, baking powder, vanilla, salt, flour, brown sugar, butter and hot water. It can either be baked in an oven or a crock pot. During the process of baking, the batter separates into two layers – the cake and the hot fudge.

 

Serving and Eating Fudge Cakes

Fudge cake is traditionally served warm with a dollop of ice-cream or whipped cream on top.

Fudge cakes also come in the vegan, sugar-free and gluten-free versions. Variations of this cake are popular throughout the United States, that is to say, that the fudge cakes of the Northeast are creamy in texture and offer a light chocolaty taste while the Southern ones are filled with richness of chocolate and have a brownie-like density.

 

A fudge cake that is topped with chocolate-flavored ice-cream as well as whipped cream is a different recipe altogether which is called Death by Chocolate. Another variation of this cake is Pudding Fudge Cake which is prepared by combining chocolate cake mix with chocolate pudding and garnished with chocolate chips. Other famous varieties include hazelnut chocolate hot fudge cake, spiced hot fudge coconut pudding cake and peanut butter hot fudge cake. To make these cakes, just some special flavorings need to be included in the basic cake recipe.
