|Honey||1⁄2 Pint (2 Gills)|
|Candied orange peel||1 Ounce|
|White flour||1 1⁄4 Pound|
Boil honey with castor sugar in a saucepan.
When honey mixture has browned, add the almonds and orange peelâ€”both chopped into longish piecesâ€”and mix with the flour.
Flavour with rum.
When the dough has cooled a little, mix in a pinch of potash and then leave overnight.
The next day lightly grease and dust tin of desired size and shape with flour, put in dough and bake in a moderate oven until brown.
