Celeriac And Banana Cake
|Sliced potatoes||3 1⁄2 Ounce|
|Sliced onions||7 Ounce|
|Peeled sliced celeriac||1 1⁄2 Pound|
|Sour cream||3 Tablespoon (Creme Fraiche)|
Put the potatoes, onions and celeriac in a casserole with 1/4 cup (3 tablespoons) of water.
Cover and microwave on HIGH for 12 minutes.
When the vegetables are cooked, drain and puree in the food processor until smooth.
Add the banana and salt and pepper to taste.
Continue liquidizing, adding the eggs one at a time, then add the sour cream (creme fraiche).
Taste and adjust seasoning.
Butter the base of a souffle mold (mould) 7 inches (18 cm) in diameter.
Pour in the mixture and cook on HIGH for 10 minutes.
Leave the cake to stand for 5 minutes, then turn out on to a serving dish.
Serve this gateau with pork or venison.
If you prefer, simply double the proportion of potatoes and omit the banana.
