Tea Cakes

Tea cakes are simple vanilla cakes made with milk, sugar, eggs and shortening. Baked as cupcakes, these tea cakes are simple, sweet and delicious. Topped with jam or served plain, these tea cakes liven up any afternoon tea gathering.
Ingredients
  Cake flour 1 2⁄3 Cup (26.67 tbs), sifted
  Baking powder 1 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Shortening 1⁄3 Cup (5.33 tbs)
  Sugar 1 Cup (16 tbs)
  Eggs 2 Small, well beaten
  Milk 2⁄3 Cup (10.67 tbs)
  Vanilla 1 Teaspoon
Directions

GETTING READY
1.Start by preheating the oven to 400F degrees
MAKING
2.In a bowl, sift flour, baking powder and salt together.
3.Cream shortening with sugar until fluffy.
4.Now add eggs.
5.Then add flour alternately with milk in small amounts.
6.Add flavoring.
7.Fill greased cupcake pans 2/3 full.
8.Last, bake in hot oven for 15 to 18 minutes.
SERVING
9.Serve with tea
