Bubbly Oatmeal Cake
|Boiling water||1 1⁄4 Cup (20 tbs)|
|Oatmeal||1 Cup (16 tbs), uncooked|
|Butter||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
|Firmly packed brown sugar||1 Cup (16 tbs)|
|Flour||1 1⁄2 Cup (24 tbs)|
|Baking soda||1 Teaspoon|
Pour boiling water over oats; cover and let stand 20 minutes.
Beat butter until creamy, gradually add sugars and beat until fluffy.
Blend in vanilla and eggs.
Add oatmeal mixture; mix well.
Mix flour, soda, salt, cinnamon and nutmeg.
Add to creamed mixture, blending well.
Pour batter into well greased and floured 9 inch square pan at 350Â°F for 50 to 55 minutes.
Do not remove cake from pan.
