No-Bake Fruit Cake
|Seedless raisins||1 Pound|
|Pitted dates||1 Pound|
|Dried apricots||1 Pound|
|Shredded coconut||1 Pound|
|Shelled walnuts||1 Pound|
|Rum||1⁄4 Cup (4 tbs) (cognac / bourbon)|
|Vanilla extract||1 Teaspoon|
Chop coarsely raisins, dates, apricots, coconut and walnuts in food processor or food chopper.
Empty mixture into a large mixing bowl.
Add salt, vanilla and liquor.
Spoon and pack the mixture into a mold or molds, or 2 6-cup loaf pans.
Cover with foil and place a weight on top.
Refrigerate 3 days or keep in a cold place to "age".
Serve thinly sliced.
