Banana And Walnut Cake

This banana walnut cake is a delightful nutty and tangy flavored cake prepared with mashed bananas, walnuts and orange and lemon zest. Prepared with a cake batter of flour, eggs, sugar, butter and lard, the banana walnut cake is baked in the oven and served on cooling.
Ingredients
  Butter 1 1⁄2 Ounce
  Lard 1 1⁄2 Ounce
  Caster sugar 4 Ounce
  Egg 1 , beaten
  Flour 8 Ounce
  Baking powder 2 Teaspoon
  Bananas 4 Medium
  Shelled walnuts 2 Ounce, chopped coarsely
  Orange 1 , zest grated
Directions

Heat the oven to 350°F (Gas Mark 4, 180°C).
Cream the fats with the sugar and beat until light and fluffy.
Beat in the egg and grated zest of orange and lemon.
Sift the flour and baking powder together and add to the creamed mixture.
Place the bananas in a small bowl and mash with a fork.
Then add to the cake mixture together with the chopped walnuts.
Turn the cake mixture into a buttered 9x5 inch loaf tin and level off the top with the back of a spoon.
Bake for 50 minutes or until a skewer inserted through the thickest part of the cake comes out clean.
Turn out onto a cake rack and allow to cool.
