Duchess Spice Cake
|Sifted flour||1 3⁄4 Cup (28 tbs)|
|Baking soda||1 Teaspoon|
|Butter||1⁄2 Cup (8 tbs) (One Stick)|
|Brown sugar||1 1⁄2 Cup (24 tbs), firmly packed|
|Eggs||2 , well beaten|
|Sour cream||1 Cup (16 tbs)|
|Seeded raisins||1 Cup (16 tbs), simmered, drained and cooled|
|Broken nut meats||1⁄2 Cup (8 tbs)|
Preheat the oven to 350 degrees.
Lightly grease a 9 x 5 x 3 inch loaf pan.
Sift together the flour, salt, soda and spices; set aside.
Cream the butter, adding the sugar gradually; blend well.
Add the eggs.
Stir in the sifted dry ingredients alternately with the sour cream.
Add the raisins and nuts.
Pour the batter into the prepared pan and bake forty five to fifty minutes.
