Celebration Coffee Cake
|Margarine||1⁄3 Cup (5.33 tbs), melted|
|Margarine||3⁄4 Cup (12 tbs)|
|Orange juice||3 Teaspoon|
|Baking powder||1 Teaspoon|
|Milk||1 Cup (16 tbs)|
|Light brown sugar||1⁄3 Cup (5.33 tbs), packed|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Grated orange rind||1 Teaspoon|
|Flour||3 Cup (48 tbs)|
|Raisins||3⁄4 Cup (12 tbs)|
Pour margarine into bottom of well greased and flowered 12 cup bundt pan; cool.
Sprinkle brown sugar over margarine.
Press nuts into sugar mixture.
Cream margarine and sugar until light and fluffy; stir in orange juice and rind.
Add eggs, one at a time, mixing well after each addition.
Sift together 2 3/4 cups flour, baking powder and salt.
Add to creamed mixture alternately with milk.
Combine raisins and remaining 1/4 cup flour; fold into batter.
Carefully spoon batter into pan AND BAKE.
