Magic Fruit Cake
|Sifted pastry flour||2 1⁄2 Cup (40 tbs)|
|Baking soda||1 Teaspoon|
|Mince meat||3 Cup (48 tbs)|
|Sweetened condensed milk||1 1⁄3 Cup (21.33 tbs) (Eagle Brand)|
|Walnuts||1 Cup (16 tbs), chopped|
|Candied fruit||2 Cup (32 tbs) (Mixed)|
Preheat oven to 300Â°F.
Grease 9 inch tube pan.
Line with brown paper; grease again.
Sift flour, salt and baking soda.
In large size bowl slightly beat eggs; add mince meat, sweetened condensed milk, sherry, nuts and fruit; mix well.
Stir in sifted dry ingredients.
Turn into prepared pan.
Bake in slow 300Â°F oven for 2 hours.
Cool in pan for 5 minutes.
Turn out of pan; remove paper.
Wrap in foil and store in refrigerator.
