Green Pea Cake
|Green peas||1⁄2 Pound, split|
|Sugar||1⁄2 Cup (8 tbs)|
|Water||2 1⁄4 Cup (36 tbs)|
Soak the peas for about 1 hour and then bring to a boil and simmer for 1 1/2 hours.
Put the puree through a fine sieve and return to the saucepan.
Add the sugar and the cornstarch, mixed with a little water, and bring to a boil again, stirring constantly.
Turn the heat low and simmer for 1 minute.
Pour into a shallow tray and cool in the refrigerator.
When set, cut into 1 inch cubes and serve.
