Queen Elizabeth Cake
|Chopped dates||1 Cup (16 tbs)|
|Boiling water||1 Cup (16 tbs)|
|Baking soda||1 Teaspoon|
|Butter||1⁄2 Cup (8 tbs) (1 Stick)|
|Sugar||1 Cup (16 tbs)|
|Flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 Teaspoon|
|Coconut frosting||1⁄2 Cup (8 tbs)|
Combine the dates, boiling water and baking soda in a small bowl; let stand for 10 minutes.
Cream the butter and sugar in a mixing bowl until light and fluffy.
Beat in the egg.
Mix in the date mixture, flour and baking powder.
Pour into a greased 9x13 inch cake pan.
Bake at 350 degrees for 30 minutes.
Frost the cooled cake with Coconut Frosting.
