New Year'S Day Cake
|All purpose flour||3 1⁄2 Cup (56 tbs)|
|Baking powder||2 Teaspoon|
|Softened unsalted butter||1 Cup (16 tbs)|
|Sugar||1 Cup (16 tbs)|
|Eggs||2 (Room Temperature)|
|Orange||1 , peel grated|
|Cream||1⁄4 Cup (4 tbs)|
|Silver coin||1 , boiled and wrapped in foil|
|Egg white||1 , beaten until frothy|
Sift flour and baking powder; set aside.
Using an electric mixer, beat butter until fluffy.
Add sugar gradually, beating 4 minutes.
Add eggs and egg yolk, one at a time, beating after each.
Add peel and nutmeg.
Combine cream and cognac; add gradually while beating.
Add dry ingredients, using a wooden spoon to mix in well.
Stir in coin.
Heavily grease a 10-inch round cake pan.
Turn batter into pan.
Press edge with fork tines to decorate.
Arrange blanched almonds in a decorative pattern on top.
Bake at 350Â°F 15 to 20 minutes, or until cake is set.
Pull out from oven, brush with egg white, and return to oven.
Continue baking until a wooden pick inserted in the center comes out clean (about 20 minutes).
Cool before serving.
