|Pecans||1 Cup (16 tbs)|
|Flour||4 Cup (64 tbs)|
|Butter||1 Cup (16 tbs)|
|Sugar||2 Cup (32 tbs)|
|Applesauce||1 1⁄2 Cup (24 tbs)|
|Soda||1 Teaspoon, dissolved (in tbs hot water)|
Fry pecans in a little butter.
Sift dry ingredients (flour, salt and spices).
Use some of flour mixture to dredge raisins and gumdrops (use scissors to cut gum drops and raisins before dredging in flour mixture).
Cream butter and sugar; add well beaten eggs.
Add flour mixture alternately with applesauce to creamed mixture.
Stir in soda, dissolved in water; add vanilla.
Add raisins, gumdrops. candied fruits (cherries, pineapple, etc.) and pecans
Pour batter into two or three tube pans lined with greased brown or parchment paper.
Bake 2 hours in 300 to 325 degree oven.
Cool on racks after removing from pans.
