Mardi Gras Party Cake With Butterscotch Filling
|Butterscotch morsels||2⁄3 Cup (10.67 tbs) (Nestle)|
|Water||1⁄4 Cup (4 tbs)|
|Sugar||1 1⁄4 Cup (20 tbs)|
|Shortening||1⁄2 Cup (8 tbs) (Part Butter)|
|Buttermilk/Sour cream||1 Cup (16 tbs)|
|Flour||2 1⁄4 Cup (36 tbs), sifted|
|Baking powder||1⁄2 Teaspoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Evaporated milk||1⁄2 Cup (8 tbs)|
|Water||1⁄3 Cup (5.33 tbs)|
|Morsels||1⁄3 Cup (5.33 tbs)|
|Egg yolk||1 , beaten|
|Coconut||1 Cup (16 tbs)|
|Pecans/Walnuts||1 Cup (16 tbs), chopped|
Combine the sugar and cornstarch in a 2 quart pan.
Stir in evaporated milk and water and morsels.
Add beaten egg yolk and cook, stirring constantly, till thick.
Remove from heat; add 2 tbs.butter, the coconut, pecans or walnuts (chopped) and dash of salt.
