Christmas Eve Cake
|Water||1 Cup (16 tbs)|
|Raisins||1 Cup (16 tbs)|
|Walnuts||1⁄4 Cup (4 tbs), chopped|
|Almonds||1⁄4 Cup (4 tbs), chopped|
|Baking powder||1 Teaspoon|
|Flour||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
|Butter||1⁄2 Cup (8 tbs)|
Mix together water, raisins, walnuts and almonds in a saucepan and bring to a boil.
Reduce heat and simmer for five minutes.
Cream together butter or margarine and sugar until light and fluffy.
Add egg and beat well.
Sift together the baking powder and flour and add to creamed mixture.
Add fruit mixture and blend thoroughly.
Pour into a well buttered and floured 8 inch (20 cm) square pan.
Bake in a 350Â°F(180Â°C) oven for about 30 minutes.
