Mocha Pound Cake

Mocha pound cake is a rich and delicious cake made with coffee and chocolate. Baked with flouir like a pound cake, the vanilla adds a mellow note to the rich and full bodied flavor of the mocha pound cake. This cake can be a great winter dessert.

Stir 2/3 cup shortening to soften.
Sift in 2 cups sifted cake flour, 1 1/4 cups sugar, 1 tablespoon instant coffee, 1 teaspoon salt, 1/2 teaspoon cream of tartar, and 1/4 teaspoon soda.
Add 1/2 cup water and 1 teaspoon vanilla; mix until flour is dampened, then beat vigorously 2 minutes.
Add 3 eggs and two 1ounce squares unsweetened chocolate, melted; beat 1 minute.
Pour into paper lined 91/2x5x3 inch loaf pan.
Bake in slow oven (325°) 65 to 70 minutes, or till done.
Cool in pan 10 minutes; remove.
