Fruit Cake (Panforte)
|Cake flour||1⁄2 Cup (8 tbs)|
|Cinnamon||1 1⁄2 Teaspoon|
|Mixed spice||1⁄2 Teaspoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Honey||1⁄2 Cup (8 tbs)|
|Mixed dried fruit||1⁄4 Pound|
|Preserved citron||1⁄2 Cup (8 tbs)|
Sift flour with the cocoa and spices.
Mix sugar and honey in a saucepan and boil for three minutes, stirring constantly.
Remove from heat.
Quickly stir in flour mixture and remaining ingredients.
Spread into a lined 9 inch (23 cm) square pan.
Bake in a 300Â°F (150Â°C) oven for about 30 minutes.
