|Fine granulated sugar||1 Cup (16 tbs)|
|Pastry flour||3⁄4 Cup (12 tbs)|
|Salt grains||To Taste|
|Cream of tartar||3⁄4 Teaspoon|
Beat the egg whites until foaming; add the cream of tartar, and continue beating until they are stiff.
Add the sugar gradually by folding it into the egg mixture with a spatula or cake spoon, then fold in the dry ingredients, flour and salt, that has been sifted together four times.
Lastly, add vanilla.
Bake in an ungreased tube pan from 45 minutes to 1 hour in a slow oven at a temperature of 300 to 325 F.
