Oatmeal Spice Cake
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Quick cooking oats||1 Cup (16 tbs)|
|Brown sugar||1 Cup (16 tbs)|
|Granulated sugar||1⁄2 Cup (8 tbs)|
|Soda||1 1⁄2 Teaspoon|
|Shortening||1⁄2 Cup (8 tbs)|
|Water||1 Cup (16 tbs)|
|Eggs||2 (0.5 To 2/3 Cup)|
|Dark molasses||2 Tablespoon|
|Coconut topping/Pineapple-coconut topping||1⁄2 Cup (8 tbs)|
Heat oven to 350Â°.
Grease and flour baking pan, 13x9x2 inches.
Measure all ingredients except topping into large mixer bowl.
Blend 1/2 minute on low speed, scraping bowl constantly.
Beat 3 minutes high speed, scraping bowl occasionally.
Pour into pan.
Bake 35 to 40 minutes or until wooden pick inserted in center comes out clean.
Spread topping over cake.
Set oven control at broil and/or 550Â°.
Place cake 3 inches from heat.
Broil 2 to 3 minutes or until topping is golden brown.
