Potato Flour Sponge Cake
|Eggs||4 , separated|
|Baking powder||1 Teaspoon|
|Powdered sugar||3⁄4 Cup (12 tbs)|
|Potato flour||5 Tablespoon|
|Pastry flour||1 Teaspoon|
(If desired one egg white may be reserved and used in a boiled icing for frosting cake.) Beat egg whites until stiff.
Fold in powdered sugar.
Beat yolks until thick and lemon colored and add flavoring, then fold yolks into whites.
Sift some of the dry ingredients over egg mixture and fold in.
Continue this process until all the dry ingredients are added.
Bake in a shallow loaf pan or an ungreased tube pan in a slow oven of 320Â° F. for 40 min.
