Check out this recipe for a vegan double layer carob/chocolate cake with cherries. Wheat free (kamut) is the base used for this cake but you can replace it with regular flour. It’s a delicious chocolate cake that uses no eggs and it turns out excellent.
Ingredients
Kamut flour 3 Cup (48 tbs)
  Baking powder 2 Tablespoon
  Sugar 2 Cup (32 tbs)
Cocoa 3⁄5 Cup (9.6 tbs) (Carob)
  Oil 1 Cup (16 tbs)
Water/1 cup of cherry juice and 1 cup of water 2 Cup (32 tbs)
Candied cherries 1 Can (10 oz)
  Vanilla 4 Teaspoon
Directions

In a bowl mix all the dry ingredients (flour, baking powder, sugar, cocoa or carob) together.
Add in the oil and mix.
Preheat oven to 350 F.
Add in the water.
Add in the vanilla.
Mix well.
Pour batter into two separate baking dish or pans.
Bake at 350 F for 20-30 minutes.
Remove from oven.
Set aside to cool.
Assemble the cake by putting the cherries on the top of one cake and placing the other cake on top.
