Clam Cakes

Ingredients
  Potatoes 3 Medium
  Canned minced clams 18 Ounce
  Onion 1 Medium
  Chopped parsley 1 Teaspoon
  Egg 1
  Flour 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Pepper 1 Dash
  Oil 2 Cup (32 tbs)
Directions

To the dry mashed potatoes add clams with their juice, onion, and parsley.
Mix together, then add egg, flour, and seasonings.
This will be a fairly liquid mixture.
Heat oil for deep frying in skillet.
If preferred, use half liquid shortening and half butter or margarine.
Drop potato and clam mixture by spoonfuls into hot fat.
Fry until crisp and brown on all sides.
Drain on paper towels.
Serve with your favorite slaw.
