Pineapple Upside-Down Cake
|Dark brown sugar||2 Tablespoon|
|Canned pineapple rings||1 Pound|
|Soft margarine||1⁄2 Cup (8 tbs)|
|Superfine sugar||1⁄2 Cup (8 tbs)|
|Self rising flour||1 Cup (16 tbs)|
Grease a 1 1/4 quart baking dish liberally with butter.
Sprinkle with the brown sugar.
Drain the pineapple rings and arrange six rings in the bottom of the dish.
Place a cherry in the center of each ring.
Chop the remaining pineapple coarsely and put to one side.
Mix the margarine and sugar with the eggs and flour until well creamed .
Stir in the chopped pineapple and spread over the pineapple rings in the dish.
Bake at 350Â°F for 45 minutes.
Turn out and serve with custard.
