Basic Layer Cake

  Rising flour 1 1⁄2 Cup (24 tbs)
  Baking powder 1 1⁄2 Teaspoon
  Soft margarine 3⁄4 Cup (12 tbs)
  Superfine sugar 3⁄4 Cup (12 tbs)
  Eggs 3 Small

Sift the flour and baking powder into the processor bowl.
Add the remaining ingredients and mix until light and fluffy .
Divide the mixture between two 7-inch layer cake pans, and bake at 350°F for 30 minutes.
Cool on a wire rack.
Variations Chocolate Layer Cake Add 1/3 cup cocoa and 1 tablespoon milk to the ingredients.
Finish with chocolate butter cream for the filling and topping, and sprinkle with 1/3 cup chopped walnuts.
Coffee Layer Cake Add 1 tablespoon coffee extract to the ingredients.
Finish with coffee butter cream for the filling and topping.
Whipped Cream Cake Whip 3 cup cream to soft peaks.
Spread a little jam on one layer, top with cream and put on the second layer.
Sprinkle the top with superfine or confectioner's sugar.
Chopped fresh, canned or frozen fruit may be mixed with the cream.
]am Layer Cake Sandwich the layers together with jam and sprinkle the top with superfine sugar or sifted confectioner's sugar.
Lemon or Orange Layer Cake Add 1 teaspoon grated lemon or orange rind and 1 tablespoon lemon or orange juice to the ingredients.
Finish with the appropriate cream for the filling and topping.
