This super rich chocolate cake is really a cake / soufflé hybrid - light airy and moist! The only trick is getting the cooking time just right.
Semisweet chocolate | 300 Gram (11 ounce) | |
Unsalted butter | 170 Gram (12 tablespoons) | |
Eggs | 6 Large , separated (at room temperature) | |
Packed brown sugar | 175 Milliliter (3/4 cup) | |
All purpose flour | 50 Milliliter (1/4 cup) | |
Bourbon | 50 Milliliter (1/4 cup) | |
Pure vanilla extract | 1 Teaspoon | |
Coarse salt | 1/2 Teaspoon | |
Icing sugar | 1/4 Cup (4 tbs) (for dusting) |
GETTING READY
1. Preheat oven to 350 degree F or 180 degree C.
2. Butter and line the bottom of a 9x3-inch round cake pan with a round piece of parchment. Place the cake pan in a roasting pan.
MAKING
3. Over double boiler, melt the chocolate and butter. Remove from the heat and let cool slightly.
4. Separate the eggs, and beat egg yolks with the brown sugar on medium speed until fluffy.
5. Reduce the speed of mixer and add the melted chocolate mixture into it. Mix just to combine.
6. While the mixer is running, add the flour, vanilla and bourbon.
7. In a separate bowl, whip the egg whites with salt on high speed until soft peaks form.
8. Add one-third of the egg whites into the chocolate mixture and mix. Then gently fold in the remaining whites.
9. In the prepared cake pan, pour the batter.
10. Add enough warm water in the roasting pan to come halfway up the sides of the cake pan.
11. Pop it in oven and bake for 40-45 minutes or until the center is set and a cake tester comes out clean.
12. Remove the cake pan from the roasting pan and run a knife around the inside of the pan. Let the cake cool completely in the pan on a wire rack.
13. When the cake cools completely invert it onto the serving plate.
14. Remove the parchment and dust the cake top generously with confectioners' sugar.
SERVING
15. Cut into pieces and serve immediately.
