Applesauce Cake

  Walnuts 1 Cup (16 tbs)
  Eggs 4
  Water 3⁄4 Cup (12 tbs)
  Biscuit mix 7 1⁄2 Cup (120 tbs)
  Sugar 3 Cup (48 tbs)
  Baking soda 1 Teaspoon
  Cinnamon 1 Tablespoon
  Cloves 1 Teaspoon
  Nutmeg 1 Teaspoon
  Thick applesauce 4 Cup (64 tbs)
  Raisins 2 1⁄4 Cup (36 tbs)
  Walnuts 1 Cup (16 tbs), chopped

In medium-size bowl beat eggs; add water. In large mixer bowl combine biscuit mix, sugar, soda, and spices. Add egg mixture and half of applesauce; beat at low speed of mixer or by hand until blended, about 2 minutes. Add remaining applesauce; beat until blended, about 2 minutes. Stir in raisins and nuts. Pour into pans lined with wax paper, pushing batter well into corners. Bake 50 to 55 minutes, or until cake tester inserted in center comes out clean. Cool in pans 10 minutes; turn out onto racks and remove paper. At altitudes less than 3,000 feet, us- a 350-degree F. oven and add 1/3 cup sugar. Bake 55 to 60 minutes.
