|Vegetable oil||25 Milliliter|
|Chopped green onion||50 Milliliter|
|Shredded cheddar cheese||50 Milliliter|
In bowl, stir together flour, baking powder, salt, thyme and pepper.
Whisk together egg, milk and 1 tbsp (15 mL) of the oil; pour over flour mixture.
Add corn, onion and cheese; mix just until combined.
Heat large skillet over medium-high heat; brush with remaining oil.
Spoon in batter to make 4 cakes; cook for 5 minutes or until golden brown underneath.
Turn and cook for about 4 minutes longer or until set.
Makes 2 servings.
(To serve 4, double the recipe.)
