All-American Apple Cake

  Flour 1⁄2 Cup (8 tbs)
  Soda 3⁄4 Teaspoon
  Cinnamon 3⁄4 Teaspoon
  Salt 1⁄2 Teaspoon
  Salad oil 1⁄4 Cup (4 tbs)
  Sugar 3⁄4 Cup (12 tbs)
  Egg 1 , beaten
  Buttermilk 3 Tablespoon
  Apples 1 1⁄2 Cup (24 tbs), peeled
  Butter 3 Tablespoon
  Milk 2 Tablespoon
  Brown sugar 1⁄3 Cup (5.33 tbs)
  Vanilla extract 1⁄4 Teaspoon
  Shredded coconut 1⁄2 Cup (8 tbs)

Sift first 4 ingredients in bowl; set aside.
Combine salad oil and sugar; beat until light and fluffy.
Add egg; mix well.
Add buttermilk and dry ingredients alternately to sugar mixture, beating well after each addition.
Beat for 2 minutes or until smooth.
Fold in apples.
Pour into buttered 8-inch square glass baking dish.
Microwave on High for 3 minutes; turn dish.
Microwave on High for 3 to 4 minutes longer.
Let stand for 5 minutes.
Microwave butter in 2-cup glass measure on High until melted.
Add remaining ingre- dients; mix well.
Spread over top of hot cake.
Place under broiler for 1 to 2 minutes or until mixture bubbles.
Serve warm.
