Orange Lovers Cake
|Raisins||1 Cup (16 tbs)|
|Walnuts||1⁄3 Cup (5.33 tbs)|
|Sifted flour||2 Cup (32 tbs)|
|Sugar||1 1⁄3 Cup (21.33 tbs)|
|Cooking oil||1⁄2 Cup (8 tbs)|
|Milk||1 Cup (16 tbs)|
Squeeze juice from orange, reserving juice.
Grind orange pulp, rind, raisins and walnuts together.
Sift flour, soda, salt and 1 cup sugar together; add oil and 3/4 cup milk, mixing well.
Beat eggs with remaining milk; stir into batter.
Fold in ground mixture.
Pour batter into greased, lightly floured 12 x 8 x 2-inch pan.
Bake at 350 degrees for 40 minutes.
Pour re- served orange juice over warm cake.
Combine re- maining sugar and cinnamon; sprinkle over cake.
