Fresh Parsnip Cakes
|Mashed cooked parsnips||2 Cup (32 tbs)|
|Salt||1 1⁄2 Teaspoon|
|Ground pepper||1⁄4 Teaspoon|
|Fresh lemon juice||1 Teaspoon|
|Fine dry bread crumbs||1⁄2 Cup (8 tbs)|
|Flour||1 Cup (16 tbs)|
|Bacon drippings||1 Tablespoon|
Combine parsnips, salt, pepper, sugar, paprika, egg, lemon juice and dry bread crumbs; mix well.
Shape into 2 1/2-inch patties, 1/2-inch thick.
Dip in flour.
Saute in bacon dripping in skillet, turning to brown both sides.
Serve hot with beef, ham, pork or lamb.
