Honey Oatmeal Cake

Ingredients
  Rolled oats 1 Cup (16 tbs)
  Butter/Oil 1⁄3 Cup (5.33 tbs)
  Boiling water 1 1⁄4 Cup (20 tbs)
  Honey 1⁄2 Cup (8 tbs)
  Vanilla 1 Teaspoon
  Eggs 2
  Whole wheat pastry flour 1 Cup (16 tbs), sifted (As Required)
  Baking soda 1 Teaspoon
  Cinnamon 1 1⁄2 Teaspoon
  Nutmeg 1⁄4 Teaspoon
  Ginger 1⁄4 Teaspoon
  Chopped nuts 1⁄4 Cup (4 tbs)
  Honey 1⁄4 Cup (4 tbs)
Directions

GETTING READY
1) Preheat oven to 350°F.
2) Grease an 8-inch-square pan with a mixture of 1/4 teaspoon liquid lecithin and 1/4 teaspoon oil.

MAKING
3) In a large bowl, combine oats, butter or oil, and boiling water.
4) Let it set 20 minutes.
5) Add honey, vanilla, and eggs.
6) Add flour, baking soda, 1 teaspoon cinnamon, nutmeg, and ginger, if desired.
7) Pour batter into the prepared pan.
8) Mix nuts and 1/2 teaspoon cinnamon together well.
9) Sprinkle over cake batter.
10) Heat honey slightly and drizzle over top of cake.
11) Bake 30 to 40 minutes.

SERVING
12) Serve the honey oatmeal cake as dessert.
