Orange Coconut Cake
|Coconut||1 Cup (16 tbs), flaked / shredded|
|Orange juice||2 Tablespoon|
|Orange rind||1 Tablespoon, grated|
|Yellow cake mix||12 Ounce (1 Package)|
|Heavy cream||1 Cup (16 tbs)|
1 Preheat the oven.
2 In a bowl, mix together coconut, orange juice and rind.
3 Allow to stand.
4 As per the package directions, prepare the cake.
5 Transfer to a 9" square pan and bake.
6 Let cool.
7 In a bowl, whip cream until very stiff.
8 Gradually fold in coconut mixture.
9 Evenly spread on the cake.
10 Place in the refrigerator and chill for several hours before serving.
11 Cut and serve.
