Lamington Cake

For cake
  All purpose flour 3⁄4 Cup (12 tbs)
  Baking powder 1 Teaspoon
  Salt 1 Pinch
  Eggs 3
  Granulated sugar 3⁄4 Cup (12 tbs)
  Vanilla 1 Teaspoon
  Boiling water 1⁄4 Cup (4 tbs)
  Butter 2 Tablespoon, melted
For filling
  Whipping cream 3⁄4 Cup (12 tbs)
  Ginger marmalade 1⁄2 Cup (8 tbs)
  Chocolate icing 1⁄2 Cup (8 tbs)
  Unsweetened chocolate 2 Ounce
  Unsalted butter 1⁄4 Cup (4 tbs)
  Icing sugar 2 Cup (32 tbs), sifted
  Milk 3 Tablespoon
  Flaked coconut 1⁄4 Cup (4 tbs)

1) Grease and line 13 x 9 inch baking pan with wax paper

2) Into a bowl, mix together the flour, baking powder and salt
3) Using an electric mixer beat the eggs, sugar and vanilla till pale and thick
4) Sift the flour into the egg mixture and fold
5) Combine water and butter and fold into the batter
6) Pour this into the pan and bake in a preheated oven for 20 minutes at 375 °F
7) Allow to cool in the pan for 10 minutes before turning out onto a wire rack
8) Into a another mixing bowl whip the cream and fold into the marmalade
9) Using a serrated knife , cut the cake across to get 2 halves
10) Spread one half with the whipping cream mixture and replace with the top half
11) Place the cake into the refrigerator till the icing is ready to be piped
12) Into a small saucepan, melt the chocolate and butter
13) Take off from the flame and beat in sugar with milk in alternatively into the melted chocolate
14) Check consistency of the icing if too loose then place in the refrigerator till slightly hardened
15) Spread onto the cake using a spatula
16) Sprinkle the flake coconut all over
17) Place the cake into the
refrigerator before serving

18) Cut into wedges and serve for tea or maybe for an after dinner dessert
