Regal Almond Cake
Almonds - 1 cup sliced
Sugar - 2 tablespoons
Butter or margarine - 1 cup
Sugar - 2 cups
Vanilla - 2 teaspoons
Almond extract - 1/2 teaspoon
Lemon peel - 1 1/2 teaspoons grated
Egg yolks - 4
Cake flour - 3 1/4 cups sifted
Baking powder - 4 teaspoons
Salt - 1 1/2 teaspoons
Milk - 1 1/2 cups
Egg whites - 4
1.Preheat the oven to 325 degrees.
2.Take a 10 inch tuber pan, grease the bottom and sides with butter and add a sprinkling of sliced almonds on it and rotate the pans so that the sides and bottom of pan are cated evenly with the nuts.
3.Add a sprinkling of 2 tablespoon of sugar on the bottom and sides.
4.Blend 1 cup butter with 2 cups sugar until light.
5.Stir in vanilla, lemon peel and almond extract.
6.Blend in egg yolks and stir until foamy.
7.Sieve flour, baking powder and salt together.
8.Add the mixture to creamed mixture alternately with milk.
9.Continue whisking after adding every time.
10.Whisk egg whites.
11.Avoid drying them
12.Make a well in the center of the batter prepared and add egg whites to it.
13.Pour the batter in the pan and bake for 1 hour 20 inutes.
14.Once done, let the cake remain in the pan for 10 minutes; take it out on a wire rasck.
15.Slice and serve with whipped cream.
