Papaya Layer Cake
|Angel food cake mix||16 Ounce (Heavenly, 1 package)|
|Ripe papaya||1 1⁄2 , 1/2 peeled and thinly sliced (very ripe)|
|Evaporated milk||1⁄3 Cup (5.33 tbs), chilled|
1 As per the package directions, bake the angel food cake.
2 Meanwhile, prepare the Papaya Fluff: Peel the papaya seed, and cut into chunks.
3 In a food processor or blender, add the papaya chunks and puree.
4 In a medium-size bowl, beat the evaporated skim milk until foamy.
5 Stir in honey and orange extract and beat constantly until stiff peaks form.
6 Blend in papaya puree until well mixed.
7 Cut the prepared cake into halves crosswise, making 2 layers.
8 Spread the bottom layer with half of the Papaya Fluff.
9 Put the second layer over it and spread rest of the papaya fluff filling on the top of the cake.
10 Let the fluff drip down the sides a little.
11 Decorate with papaya slices and serve immediately.
