Devil's Food Cake
|Eggs||3 , separated|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Butter||1⁄2 Cup (8 tbs)|
|Brandy extract||2 Teaspoon|
|Unsweetened chocolate square||2 Ounce, melted|
|Cake flour||2 Cup (32 tbs), sifted|
|Sour cream||1 Cup (16 tbs)|
1 Preheat the oven to 350°Fahrenheit.
2 Grease two 8-inch square or 9-inch round layer cake pans and dust with flour.
3 In a bowl, beat egg whites until almost stiff.
4 Gradually mix in 1/2 cup of sugar.
5 Beat constantly until stiff peaks form; keep aside.
6 In a bowl, cream together butter, the remaining 1 cup sugar and spices until light and fluffy.
7 Add in egg yolks, one at a time, beating well after each addition.
8 Blend in the extract and melted chocolate.
9 In a separate bowl, sift together flour, soda and salt.
10 Add to the creamed mixture alternately with sour cream.
11 Gently fold in the stiffly beaten egg whites.
12 In the two prepared pans, pour the mixture.
13 Using a knife, cut through the batter to remove large air bubbles.
14 Bake in the oven for 30 to 35 minutes.
15 Can be frosted with Mint Frosting and decorated with Chocolate Dehors if desired.
