Shrimp Cakes

Ingredients
  Butter 1⁄4 Cup (4 tbs)
  Chopped onion 1⁄4 Cup (4 tbs)
  All-purpose flour 3 Tablespoon
  Prepared mustard 1 Teaspoon
  Light cream 1 Cup (16 tbs)
  Salt To Taste
  Pepper To Taste
  Cooked shelled shrimps 1 Pound, chopped
  Cracker crumbs 1⁄4 Cup (4 tbs)
  Butter 1 Tablespoon
Directions

MAKING
1 In a pan, melt butter and cook onion in it until soft.
2 Blend in flour along with mustard, cream, and salt and pepper to taste.
3 Add the shrimps when the mixture becomes thick and smooth.
4 Place in the refrigerator and chill.
5 Form the chilled mixture into cakes and roll in cracker crumbs.
6 In a skillet, add plenty of butter to saute the prepared cakes.
7 To make the sauce: Mix 1 cup mayonnaise, 1/2 cup chopped ripe olives, 1 tablespoon minced fresh dill, and 1 tablespoon fresh lemon juice.

SERVING
7 Serve at once with the sauce.
