Banana and Chocolate fudge cake
|Very ripe bananas||4|
|Cocoa powder||100 Gram|
|Castor sugar||150 Gram|
|Rice flour||150 Gram|
|Vanilla||1⁄2 Teaspoon (Use 1 Splash)|
|Chocolate chips||100 Gram|
|Dried cranberries/Sultanas / currents / chopped dates / whatever desired||100 Gram|
Preheat oven to 200 c
Mash bananas and beat the eggs - use a food processor if you have one.
Add all the other ingrediants except choc chips and blend together until you have a very smooth batter. Stir in choc chips and fruit.
Pour into a greased, lined cake tin.
Spoon into cake tin. Put in oven and turn oven down to 130 c. Cook for 3/4 hour then check with a skewer. Cake should be sticky but firm. Allow to cool down before turning out of tin.
Eat with ice cream.
