Bubble and Squeak
|Salt beef||1 1⁄2 Pound, cooked and thinly sliced (675 Gram)|
|Butter||6 Ounce (175 Gram)|
|Cabbage||1 1⁄2 Pound, cooked and sliced small (675 Gram)|
1) Fry the meat briefly for a few minutes in half the butter by turning and then scatter with a little salt and lots of pepper.
2) Place in a serving dish.
3) Now fry the cabbage in the remaining butter for a few more minutes.
4) Add the required seasonings and place on to the meat.
5) The dish is now ready to be served with pickled cucumbers or walnuts, or a melted butter sauce flavoured with mustard.
(Equally authentic, though a little reminiscent of the fish-and-chip shop, is to give this dish a simple drizzling of vinegar)
