Chocolate Fruit Cake
|Unsweetened chocolate||3 Ounce|
|Shortening||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
|Flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Milk||1⁄3 Cup (5.33 tbs)|
|Candied fruits||3 Cup (48 tbs), chopped|
|Raisins||1 Cup (16 tbs)|
|Walnuts||1 Cup (16 tbs), chopped|
Grease bottom and sides of a 10-inch tube pan and line with wax paper or aluminum foil; set aside.
Preheat oven to 275°F (135°C).
Melt chocolate; set aside.
In a large mixer bowl, cream shortening and sugar until fluffy.
Add eggs 1 at a time, beating well after each addition.
Stir in melted chocolate.
Combine flour, baking powder, salt and cinnamon.
Add to chocolate mixture alternately with milk.
Stir in candied fruits and peels, raisins; walnuts and brandy.
Pour into prepared pan.
Bake 1 hour and 45 minutes or until done.
Cool in pan 10 minutes.
Turn out on wire rack.
