One Dish Date Pudding Cake
|Dates||1 Cup (16 tbs), finely chopped|
|Butter||1⁄4 Cup (4 tbs)|
|Boiling water||1 Cup (16 tbs)|
|All purpose flour||1 1⁄4 Cup (20 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Finely chopped walnuts||1⁄4 Cup (4 tbs)|
|Baking soda||1 Teaspoon|
|Baking powder||1⁄2 Teaspoon|
|Brown sugar||1 Cup (16 tbs)|
|Boiling water||1 1⁄2 Cup (24 tbs)|
Base: In 8-cup (2 L) casserole, place dates and butter.
Pour boiling water over; stir to melt butter.
Stir in flour, sugar, nuts, egg, baking soda, baking powder and salt.
Beat with fork until well mixed.
Scrape down sides of dish with rubber spatula.
Topping: Sprinkle brown sugar over batter.
Slowly pour boiling water over.
Micro-cook at high for 12 to 15 minutes or until top is firm and springs back when lightly touched, rotating 1/4 turn 2 or 3 times during cooking.
