Caramel Icing For Spice Cake
|Firmly packed brown sugar||1 Cup (16 tbs)|
|Light cream||1⁄4 Cup (4 tbs)|
|Sifted icing sugar||2 1⁄2 Cup (40 tbs)|
Mix the brown sugar, butter, and cream in a heavy-bottomed saucepan.
Stir over low heat until the sugar dissolves.
Bring rapidly to the boil and boil without stirring 2 minutes.
Remove from heat.
Cool to lukewarm.
Place the pan in ice water.
Add the rum and enough of the icing sugar to make it thick enough to spread easily.
Spread over the cake.
