Chocolate Surprise Bundt Cake
|Dried apricots||1⁄2 Cup (8 tbs), chopped|
|Chocolate chips||1⁄2 Cup (8 tbs)|
|Walnuts||1⁄2 Cup (8 tbs), chopped|
|Chocolate cake mix||18 1⁄4 Ounce (1 Box)|
|Low fat buttermilk||1 1⁄2 Cup (24 tbs)|
|Powdered sugar||1 Tablespoon|
Preheat oven to 350°.
Coat a 12-cup Bundt pan with cooking spray; dust with flour.
Combine apricots, chocolate chips, walnuts and cornstarch in a small bowl; stir to coat and set aside.
Combine cake mix, eggs and buttermilk in a large mixing bowl; mix at slow speed of an electric mixer until blended.
Fold in apricot/nut mixture.
Pour into prepared Bundt pan and bake 40-50 minutes.
Cool in pan for 25 minutes, then turn out on a cooling rack.
Sprinkle top with powdered sugar before serving.
