Todmorden Cinnamon Coffee Cake
|Butter||1⁄2 Cup (8 tbs)|
|White sugar||1⁄2 Cup (8 tbs)|
|Baking soda||1 Teaspoon|
|Sour cream||1 Cup (16 tbs)|
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|White sugar||1⁄4 Cup (4 tbs)|
|Ground cinnamon||1 Tablespoon|
|Nuts||2 Tablespoon, chopped|
Cream the butter till light and fluffy.
Beat in the sugar.
Add the eggs one at a time, beating after each addition.
Stir in the vanilla.
Dissolve the soda in the sour cream.
Sift together the flour, baking powder, and salt.
Add the dry ingredients in 3 parts alternately with the sour cream and soda in 2 parts to the beaten mixture.
Combine the ingredients for the topping.
Spoon half the batter into a well greased 9" x 9" cake tin.
Sprinkle with half the topping, add remaining batter, and sprinkle with the rest of the topping.
Bake at 350 degrees for 25 minutes or until it comes away from the sides.
Serve while still warm.
