Oats 'n Fruit Coffee Cake
|Quaker oats||3⁄4 Cup (12 tbs) (Quick Or Old Fashioned, Uncooked)|
|Vegetable oil margarine||2 Tablespoon, liquid|
|Sugar||1 Cup (16 tbs)|
|Vegetable oil margarine||1⁄4 Cup (4 tbs), liquid|
|Skim milk||2⁄3 Cup (10.67 tbs)|
|Egg whites||2 , slightly beaten|
|Whole wheat flour||1 Cup (16 tbs)|
|Quaker oat bran hot cereal||1⁄2 Cup (8 tbs), uncooked|
|Baking powder||1 Teaspoon|
|Chopped dried apricots/Raisins, dates, prunes / figs||1⁄2 Cup (8 tbs)|
Combine oats, 2 tablespoons sugar and cinnamon.
Stir in 2 tablespoons margarine; mix well.
Heat oven to 350°F.
Lightly spray 8 or 9-inch square baking pan with vegetable oil cooking spray or oil lightly.
Beat 1 cup sugar and 1/4 cup margarine until well blended.
Add combined milk, egg whites and vanilla; mix well.
Add combined whole wheat flour, oat bran and baking powder, mixing until well blended.
Spread into prepared pan; sprinkle evenly with apricots.
Top with reserved oat mixture to cover apricots.
Bake 35 to 40 minutes or until wooden pick inserted in center comes out clean.
Cool completely on wire rack.
Wrap securely; store at room temperature.
